Palace Casino Resort is proud to announce our Administrator & Associates of the Quarter. Quarterly Associates and Administrator each received cash, a hotel stay and dinner for two at Mignon’s Steaks & Seafood fine dining restaurant.
Anthony Salazar, Mignon’s Steaks & Seafood Cook, was awarded Associate of the Quarter for his exemplary guest service, enthusiasm and creativity. Anthony has been employed at the Palace since July 2015.
Darla Lenkowski, Special Events Manager, was named Administrator of the Quarter. She was recognized for going above and beyond her assigned duties. Darla has been employed at the Palace since June 2007.
Joey Womack, Technology Technician, was awarded Associate of the Quarter for his quick response to department requests for technology assistance. Joey has been employed at the Palace since August 2010.

Palace Casino Resort has received notification that the resort hotel was awarded the prestigious Four Diamond rating by the American Automobile Association (AAA). The designation marks the tenth year the Palace has received the award in recognition of the resort’s stylish and refined attributes, guest service and amenities.
“We’re extremely proud the Palace Casino Resort was recognized for the tenth time by the American Automobile Association as a Four Diamond Award hotel,” stated Keith Crosby, General Manager. “This prestigious award recognizes our staff’s commitment to providing superior guest service and maintaining clean, high quality hotel accommodations,” Crosby continued.
The AAA Diamond Rating Process is North America’s largest hotel and restaurant rating system. The AAA Diamond Rating Process is the only hotel and restaurant rating system that covers the entire United States and Canada, as well as top destinations in Mexico and the Caribbean. Palace Casino Resort joins a very select group of AAA Four Diamond Award winners. Only 5.7% percent of more than 28,500 hotels achieve the AAA Four Diamond designation.

Palace Casino Resort is proud to be the recipient of a Certificate of Appreciation from the Mississippi Tobacco-Free Coalition of Harrison County. The coalition recognized the resort for leading the way on the Mississippi Gulf Coast as the first and only 100% smoke free casino resort. The certificate was presented to Keith Crosby, General Manager, in appreciation for providing a smoke free environment for the resort’s employees and guests.
The Palace became 100% smoke free in June 2011 after completing an expansion and renovation of the property. The resort employs nearly 700 associates, and the hotel features 236 guest rooms and suites overlooking the Gulf of Mexico and Biloxi Back Bay. The casino offers over 850 slot machines and a spacious table games pit. Palace Casino Resort has five restaurants, including the award-winning Mignon’s Steaks & Seafood, Palace Buffet, STACKED Grill, Palace Café & Bakery and CONTACT Lounge & Sports Bar. The resort also features PURE the Palace Spa and The Preserve Golf Club, designed by Jerry Pate.
“Going 100% smoke free was the right thing to do. It allows us to offer a healthier, cleaner and more enjoyable environment for our associates and guests,” said Crosby. “We’re proud to be a leader in our market.”
The Mississippi Tobacco-Free Coalition of Harrison County is one of 34 coalitions serving all 82 Mississippi counties. The grassroots groups work to reduce tobacco-related disease and death by educating youth about the dangers of tobacco, encouraging communities to implement smoke free ordinances and promoting tobacco cessation services.

Dean Kronauer, Executive Chef at the Palace Buffet, recently placed in the Top 10 in the World Sandwich Championship category of the World Food Championships!
The World Food Championships is the largest competition in food sport, where champions of previous events convene in Kissimmee, Florida, for a chance at winning the ultimate food crown and a share of $300,000. This was Chef Dean’s second time participating in this prestigious food competition. He competed in the sandwich category in 2012.
The World Sandwich Championship, which took place from November 3 - 10, pitted 27 of the world’s best sandwich-makers against each other, and the clock, in a tournament-style competition.
Each competitor prepared two different dishes for entry in round one. The first Structured Build entry was a Ribeye Steak Sandwich, which required all of the competitors to use product provided by The Kansas City Steak Company. The second entry was the competitor’s choice, a Signature Dish.
Chef Dean’s first entry was a Bacon-Jamming Ribeye Steak Sandwich. His second entry was his signature Southern Shrimp Boil Wrap, which advanced him into the Top 10 for the Final Round of the competition. Chef Dean’s final entry was a Seared Salmon with Poached Egg Sandwich, with which he won ninth place overall.
Chef Dean qualified to compete in the World Food Championships by winning first place at the Merchants Foodservice Culinary Expo in March 2015 with his Southern Shrimp Boil Wrap in the ‘Best Sandwich of the South’ category. This culinary creation is his own recipe of boiled shrimp, diced red potatos, yellow cut corn, red onion, chopped cilantro, iceberg lettuce and Cajun remoulade sauce, wrapped in a flour tortilla. Chef Dean’s Southern Shrimp Boil Wrap was a menu favorite this past summer at Wahoo’s Poolside Bar & Grill at the Palace.
Dean Kronauer’s passion for food began at an early age as he watched and admired his mother and military cook father both prepare meals at home. He received lessons on cooking Southern food from scratch from his grandmother. Chef Dean first started cooking professionally at a donut shop, and then moved on to a diner with numerous kitchen responsibilities. It was at this job where he started developing his own recipes and style of cooking. Chef Dean joined the Food & Beverage team at Palace Casino Resort in August 2001, and he was promoted to his current position of Buffet Executive Chef in October 2005.

Jennifer Casper, Food & Beverage Supervisor, was named Administrator of the Quarter. Jennifer consistently challenges F&B associates to achieve a higher level of guest service. She always checks in with guests to make sure they are having a good experience. Jennifer is easy to work with and highly organized. She has also taken over many administrative duties that keep the F&B department running. Jennifer has been employed at the Palace since May 2012.
Morgan Speth, Security, was awarded Associate of the Quarter. Morgan is very knowledgeable of all promotions and his friendly attitude makes guest service issues very easy to handle. Morgan is always on time and willing to work over if needed. He is a good example for other associates to follow. Morgan has been employed at the Palace since February 2001.
Pauline Lowe, Housekeeping, was awarded Associate of the Quarter. Pauline is a very attentive Room Attendant. Not only does she clean the rooms well, but she pays attention to guest needs. Pauline is always available when needed. She will help others if she is done with her rooms and is always a team player. Pauline has been employed at the Palace since April 2007.
